Lentil Paste/Lentil Stew - Extravagance House

Ingredients

  • 500 g yellow lentils
  • 2 l water
  • 330 ml homemade tomato paste
  • 160 g diced onion
  • 100 g grated carrot
  • 15 g garlic (2-3 cloves)
  • 200 g frozen spinach
  • 1 tbsp homemade seasoning or 1/2 vegetable cube stock
  • 1 tsp pepper

Instructions

  1. Wash the lentils until the water is clean. Prepare the rest of the ingredients.

  2. Boil in 1.5 l water and tomato paste. Boil for 20 minutes.

  3. Dice the onion and grate the carrot.

  4. Add them to the lentils with the remaining water. Boil for another 10-15 minutes, if you want a stew. Boil 20 more minutes if you want to make Lentil Paste.

  5. Add the spinach, homemade seasoning (the cube), pepper, and garlic. Boil 5-10 minutes, depending on how fast the spinach will cook.

  6. Put the lentils into a blender or use a vertical one, and blend to a paste.

  7. Serve with white rice or wholemeal bread, for a vegetarian dish or if you are fasting.

    If you want, add turkey meatballs, chicken breast, or pork.

    The Lentil Paste can be used as an appetizer together with Garlic Sauce, Avocado Sauce.

    Serve as breakfast or brunch with toasted bread and pickles.
