- 300 g chicken breast or skinless, boneless chicken thigts
- 150 g onion
- 150 g tomatoes
- 150 g bell pepper, yellow and green or what you have on hand
- 100 g button mushrooms
- 1 tsp coarse salt
- 1/2 tsp black pepper
- 1 tsp dried parsley leaves
- 5-6 tbsp oil (put aside 2 tbsp for frying)
Cube the meat and vegetables in same size pieces.
Mix spices with a part of the oil (3-4 tbsp).
Prepare the skewers by alternating meat and vegetables.
Spread the mixture of oil an spices over the skewers.
Grease a grill pan with the remaining oil and place on medium heat.
Place the skewers in the heated pan. Cook on medium heat too allow the vegetables to soften.
Fry the skewers on each side for 3-5 minutes.
Serve immediately or wait 5 minutes for the juices in the skewers to settle.
Serve simple, with garlic sauce, with french fries or as you like.
