Garam Masala
Garam Masala is a spice mix used in Indian dishes.
They are many versions of Garam Masala. You can choose to make one with the ingredients available to you.
Usually is made using whole spices, lightly heated (until you can feel the smell of the spices). Leave to cool and use a grinder or a mortar to grind them. If you have time, make this version before starting cooking.
Below you will find the quick version, made with ground spices.

Ingredients
- 1 tbsp cumin
- 1 tbsp coriander
- 1 tbsp green cardamom (or a mix of green and black cardamom)
- 1 tsp cinnamon
- 1 tsp black pepper
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- 1/2 - 1 tsp chili optional
- 1/2 tsp bay leaf optional
- 1/2 tsp fennel optional
- 1/2 tsp star anise optional

This quantity is enough to cook 2 dishes for 4 people.
If you wish, supplement the cumin, coriander, and pepper with 1/2 teaspoon.
