Prepare the ingredients.
Dice the onions and the cheese. Keep a bit of the onion for decor.
Heat the oil on high heat. When the oil is hot, add the green onions and sweat for 1 minute. You want the green onions to soften a bit.
Crack the eggs and beat well. Add the cubed cheese, the salt, and the pepper and beat a bit more.
Add the mix to the pan. Keep on high heat for 1 minute, pushing the cooked eggs towards the middle of the pan.
Reduce heat to a minimum, and mix from time to time (if you don't want your eggs fried and you like them just coagulated) until the eggs are coagulated in a proportion of 75-80% (you can't see any runny eggs).
Stop the heat, mix the eggs again and leave the eggs in the pan, on the stove for 3 - 5 more minutes. They will continue to cook from the radiating heat.
Serve with Spring Salad and Homemade Wholemeal Bread with Seeds.
Your eggs will be really creamy, cooked this way.
